There is an article, Helluva Hotel by Clive Unger-Hamilton, in Slightly Foxed, (No. 18, Summer 2008) which reviews Bemelmans memoir, Hotel Bemelmans (originally published as Hotel Splendide in 1956) describing his initial career in luxury hotel catering.
